
Pineapple Lump Slice

INGREDIENTS
75g melted butter
150g almond flour
1 egg
4 tbs sweetener of your choice (I used Natvia)
2 1/2 tbsp gelatine
4 drops of yellow food colouring (optional)
20 drops of Vital Zing Pineapple Water Drops
90g milk chocolate
2 tbs coconut oil
PREHEAT OVER TO 180c
STEP 1 : BASE
Combine melted butter, egg, almond flour and 1 tbs of sweetener to form a dough. Mix is quite wet which is ok don't be tempted to add more flour. Press into baking tin with your fingers and bake until golden brown. Approximately 15 - 20 minutes. Remove from t he oven and let cool.
STEP 2 : MARSHMALLOW
Place 1/2 cup room temperature water and gelatine in a bowl. Set aside to bloom. In a saucepan add the remaining water, 4 tbs of sweetener and yellow food colouring. Bring to a simmer. When all the sweetener has dissolved, add this slowly to the set aside gelatine mix while beating with a hand mixer. Add the Vital Zing Pineapple Water Drops . Keep beating until the marshmallow thickens bit is still a pourable consistency. ( You may want to taste before this point to see if you'd like to add more Pineapple WaterDrops as this is a palette preference). Leave to set.
STEP 3 : TOPPING
Melt the milk chocolate with the coconut oil and allow to cool before spreading over the set marshmallow.
TIP : Cut this slicew into pieces before the chocolate hardens completely.
