Pineapple Lump Slice

PINEAPPLE LUMP SLICE

INGREDIENTS
 
75g melted butter 
150g almond flour
1 egg
4 tbs sweetener of your choice (I used Natvia) 
2 1/2 tbsp gelatine
4 drops of yellow food colouring (optional)
90g milk chocolate
2 tbs coconut oil
PREHEAT OVER TO 180c

STEP 1 : BASE
Combine melted butter, egg, almond flour and 1 tbs of sweetener to form a dough. Mix is quite wet which is ok don't be tempted to add more flour. Press into baking tin with your fingers and bake until golden brown. Approximately 15 - 20 minutes. Remove from t he oven and let cool.

STEP 2 : MARSHMALLOW
1/2 cup water, 3 tbsp Sweetener, Yellow food colouring in a pot and bring to simmer until sweetener has dissolved.
In a separate Bowl 1/2 cup water, 2 1/2 tbsp Gelatine
Pour heated Water into this while beating with a hand mixer. I added Vital Zing Pineapple Water Drops while beating to taste. Keep beating until the marshmallow thickens bit is still a pourable consistency. ( You may want to taste before this point to see if you'd like to add more Pineapple WaterDrops as this is a palette preference). Let marshmallow set before topping with Chocolate

STEP 3 : TOPPING
Melt the milk chocolate with the coconut oil and allow to cool before spreading over the set marshmallow.
TIP : Cut this slicew into pieces before the chocolate hardens completely.
