Keto "Apple" Crumble Muffins

VITAL ZING "APPLE" CRUMBLE MUFFINS

MAKES 12 MUFFINS

MUFFIN MIX:
- 200g almond meal
2 & 1/2 teaspoons of baking powder
- a pinch of salt
- 2 eggs
1/4 cup of butter ( or coconut oil )
1/4 cup of Natvia keto sweetener
1 teaspoon of vanilla extract
1 teaspoon of cinnamon
spiced keto "apple" mix
brown sugar crumble

KETO APPLE MIX :
2 zucchini diced
1 tablespoon of cinnamon
1 teaspoon of powdered cloves
1 teaspoon of all spice
1 teaspoon of nutmeg
1/2 cup of water
BROWN SUGAR CRUMBLE
1/2 cup of almond meal
1 tablespoon of coconut oil
2 tablespoons of Natvia keto sweetener
1 tiny drizzle of molasses

TO MAKE APPLE SPICE FILLING
Combine the zucchini, spices and Vital Zing Water Drops in a saucepan. Slowly add in the water, ( not all at once ) as needed and cook over a hot heat. Taste and add more Vital Zing Water Drops if you want a stronger flavour. If you need to add in a bit of water do it slowly. Cook the zucchini to the texture you want it to be. I kept mine with a bit of bite to it, as it will cook more in the muffins. Set aside to add to your muffin mix.

TO MAKE BROWN SUGAR CRUMBLE
Combine Natvia and molasses together in a small bowl to create the brown sugar.. Add in almond meal and coconut oil.
Crumble onto a baking sheet and bake for 15 mins at 180°C or until it begins to crisp up. Remove and set to the side but keep the oven on.

TO MAKE THE MUFFINS
In a large bowl combine the flour, baking powder, Natvia, salt and vanilla. Whisk eggs and add with the melted butter ( or coconut oil ). Carefully fold in the spiced apple mix to the muffin batter.
Place in a muffin tray that has been lined with silicon muffin cups or paper cups. Sprinkle with a little brown sugar crumble on top of each muffin.
Bale for approximately 25 mins until the crumble is golden brown and the muffins have cooked through.
